UVigo joins a European study to enhance wheat microbiome for healthier, sustainable food and feed
Rosa Pérez Gregorio (UVigo) and Susana Sonar (Requimte) lead the Wheatbiome project, funded with 5 million euros and involving 13 European entities.
The project merges Susana’s work on dietary bioactives and taste perception with Rosa’s focus on the modulation of (auto)immune diseases linked to food. Professor Jesús Simal (UVigo) proposed concentrating the research on wheat, a sustainable crop, aiming to minimize the harmful effects of gluten. Wheatbiome seeks to develop healthier, more sustainable, and resilient food and feed products by leveraging the potential of the wheat microbiome.
